Watermelon Cucumber Feta Salad

Ingredients:

  • 4 cups watermelon, cubed

  • 2 cups cucumber, diced

  • 1/2 cup red onion, thinly sliced

  • 1/2 cup fresh mint leaves, chopped

  • 1/2 cup fresh basil leaves, chopped

  • 1/2 cup crumbled feta cheese

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. In a large bowl, combine watermelon cubes, diced cucumber, thinly sliced red onion, chopped fresh mint leaves, and chopped fresh basil leaves.
  2. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, salt, and black pepper.
  3. Pour the dressing over the salad ingredients in the large bowl.
  4. Gently toss the salad until everything is well combined and coated with the dressing.
  5. Sprinkle crumbled feta cheese over the salad.
  6. Adjust seasoning if needed.
