Swiss Cheese Fondue

Ingredients:

  • 400g Swiss cheese (Gruyère, Emmental), grated

  • 200ml dry white wine

  • 1 clove garlic, halved

  • 1 tablespoon cornstarch

  • 2 tablespoons Kirsch (cherry brandy)

  • 1 tablespoon lemon juice

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon black pepper

  • 1 French baguette, cut into bite-sized cubes for dipping

Instructions:

  1. Rub the inside of a fondue pot with the halved garlic clove.
  2. In a bowl, toss grated Swiss cheese with cornstarch until evenly coated.
  3. Heat white wine in the fondue pot over medium heat until it starts to simmer.
  4. Gradually add cheese mixture to the simmering wine, stirring constantly in a figure-eight motion until cheese is melted and smooth.
  5. Stir in Kirsch (cherry brandy), lemon juice, nutmeg, and black pepper.
  6. Continue to cook and stir until the fondue is smooth and creamy, but avoid boiling.
  7. Adjust seasoning if needed.
  8. Transfer fondue pot to a fondue burner or low heat source to keep warm.
  9. Serve immediately with bite-sized cubes of French baguette for dipping.
