Rub each potato with olive oil, salt, and black pepper.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, until tender.
Remove the potatoes from the oven and let them cool slightly.
Cut each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with sour cream, half of the shredded cheese, half of the crumbled bacon, half of the chopped green onions, and chopped parsley. Season with salt and pepper to taste.
Stuff the potato skins with the mashed potato mixture.
Sprinkle the remaining shredded cheese, crumbled bacon, and chopped green onions over the stuffed potatoes.
Return the stuffed potatoes to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
Remove from the oven, garnish with additional chopped parsley if desired, and serve hot. Enjoy!
