Hasselback Potatoes

Ingredients:

  • 8 medium potatoes

  • 4 tablespoons butter, melted

  • 2 tablespoons olive oil

  • 4 garlic cloves, minced

  • 1 teaspoon salt

  • 0.5 teaspoon black pepper

  • 1 teaspoon paprika

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Scrub the potatoes clean and pat them dry.
  3. Cut slits into each potato, making sure not to cut all the way through. Place the potatoes on a cutting board and place chopsticks or wooden spoons on each side of the potato to prevent cutting all the way through.
  4. In a small bowl, mix together the melted butter, olive oil, minced garlic, salt, black pepper, and paprika.
  5. Place the potatoes on a baking sheet lined with parchment paper or aluminum foil. Brush the potatoes generously with the butter mixture, making sure to get in between the slits.
  6. Bake in the preheated oven for 45 minutes to 1 hour, depending on the size of the potatoes, until they are crispy on the outside and tender on the inside.
  7. Remove from the oven, garnish with chopped parsley, and serve hot. Enjoy!
