Roasted Garlic Parmesan Potatoes

Ingredients:

  • 8 medium potatoes, washed and cut into cubes

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, combine olive oil, minced garlic, grated Parmesan cheese, dried rosemary, dried thyme, salt, and black pepper.
  3. Add cubed potatoes to the bowl and toss until evenly coated with the mixture.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
  5. Bake in the preheated oven for 30-35 minutes, stirring halfway through, until potatoes are golden brown and crispy.
  6. Remove from the oven and let cool slightly.
  7. Sprinkle with chopped fresh parsley if desired.
  8. Serve hot as a delicious side dish. Enjoy!
