Roasted Garlic Parmesan Potatoes
Ingredients:
- 8 medium potatoes, washed and cut into cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
- Preheat your oven to 220°C (425°F).
- In a large bowl, combine olive oil, minced garlic, grated Parmesan cheese, dried rosemary, dried thyme, salt, and black pepper.
- Add cubed potatoes to the bowl and toss until evenly coated with the mixture.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
- Bake in the preheated oven for 30-35 minutes, stirring halfway through, until potatoes are golden brown and crispy.
- Remove from the oven and let cool slightly.
- Sprinkle with chopped fresh parsley if desired.
