Pesto Cherry Tomato Pasta
Ingredients:
- 400g pasta of your choice
- 250g cherry tomatoes, halved
- 100g (1/2 cup) pesto sauce
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions:
- Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the pan and cook for about 5-7 minutes until they start to soften and release their juices. Season with salt and pepper to taste.
- Add the cooked pasta to the pan with the cherry tomatoes and toss to combine.
- Stir in the pesto sauce until the pasta is well coated.
- Serve the Pesto Cherry Tomato Pasta hot, garnished with fresh basil leaves and grated Parmesan cheese.
