Cheesy Garlic

Ingredients:

  • 400g spaghetti or other pasta of your choice

  • 4 tablespoons butter

  • 6 garlic cloves, finely chopped

  • 250ml (1 cup) heavy cream

  • 100g (1 cup) grated Parmesan cheese

  • 100g (1 cup) grated mozzarella cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

  • Chopped parsley, for garnish

Instructions:

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and reserve some pasta water.
  2. In a large pan, melt the butter over medium heat. Add the chopped garlic and sauté for about 1-2 minutes until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Let it cook for about 2-3 minutes, stirring occasionally.
  4. Reduce the heat to low and stir in the grated Parmesan and mozzarella cheese until melted and smooth.
  5. Add the dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Add the cooked pasta to the pan and toss to coat with the cheesy garlic sauce. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
  7. Serve the Cheesy Garlic Pasta hot, garnished with chopped parsley.
