Lemon Garlic Butter Salmon

Ingredients:

  • 4 cod fillets (about 200g each)

  • 2 tablespoons olive oil

  • 1 onion, sliced

  • 2 cloves garlic, minced

  • 200g cherry tomatoes, halved

  • 100g black olives, pitted

  • 1 tablespoon fresh thyme, chopped

  • 1 teaspoon salt

  • 0.5 teaspoon black pepper

Instructions:

  1. Preheat your oven to 180°C (350°F). Lightly grease a baking dish with olive oil.
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
  3. Add cherry tomatoes, olives, thyme, salt, and black pepper. Cook for 5 minutes until tomatoes start to soften.
  4. Place cod fillets in the greased baking dish. Spoon the tomato and olive mixture over the cod.
  5. Bake in the preheated oven for 20 minutes, or until the cod is cooked through and flakes easily with a fork.
