Lemon Garlic Butter Salmon
Ingredients:
- 4 cod fillets (about 200g each)
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 200g cherry tomatoes, halved
- 100g black olives, pitted
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions:
- Preheat your oven to 180°C (350°F). Lightly grease a baking dish with olive oil.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
- Add cherry tomatoes, olives, thyme, salt, and black pepper. Cook for 5 minutes until tomatoes start to soften.
- Place cod fillets in the greased baking dish. Spoon the tomato and olive mixture over the cod.
- Bake in the preheated oven for 20 minutes, or until the cod is cooked through and flakes easily with a fork.
